"The Brew Before Christmas"

 'Twas the month before Christmas, and into the night
supplies for beer making were stacked to great height
For soon Santa would show, and in want of a beer,
I must fulfill my duty, and offer it here.
To Twin Pepper I headed, with beer mug in tow,
to fire up the brew pot and set it aglow.
With plans for fresh porter, and lager and stout,
the tools of the trade were soon spread all about.
Fresh barley and hops, and yeast on the table,
the kettles would roll just as quickly as able.
Some crystal, some Munich, and chocolate and pale,
these malts would ferment and become a new ale.
First a dose of Cascades and Chinook in the boil,
and soon the hop cones filled the air with their oil.
Both bitter and sweet, a lovely taste was now there,
should I toss in some Fuggles next? ...do I dare?
As the steam did arise, and moist heat filled the room,
I took that free time to sweep up with the broom.
Back to storage the grains, to the freezer the hops,
it's in keeping things neat that a beer becomes tops.
In an hour the boil ended, and the room was quite warm,
thank goodness it's winter, or the bees would have swarmed.
As the sweet smell of wort made its way to my nose
the grain bed was rinsed with the sparge water hose.
To the carboy drained the nectar that soon would be beer,
it was pleasing to see it was running so clear.
As I pitched the yeast slurry, I silently prayed,
for when we start the ferment is the time we're afraid.
Lest the tiniest germ made its way to the kettle,
it may have fed quickly, and choose there to settle.
But for those bugs there were cures that they could not face,
the sterilizing process put the yeast in first place.
Outside snow fell gently, carried down on light winds,
As I sat and awaited the magic's begin.
Just a few hours or more, and the airlock would bubble,
a sure sign that the batch was not having such trouble.
So it went, now fermented, into beer it had turned,
for a taste of it surely my taste buds yearn.
I was anxious, mug in hand, as I lifted the cover,
knowing luck again smiled on this humble beer lover.
To my lips aimed the mug as I took in the sample,
in an instant I knew that this batch was not ample.
The color was rich, and the flavor so right,
I'd be lucky for this batch to last a week's night.
To good friends I would send some
both from far and from near,
we would share in my bottles of Holiday Cheer.
Round a fire of great warmth,
I did pour with a smile,
knowing my friends did the same all the while.
Cross the country we toasted
as we sipped on the brew,
and shared in good wishes for me and for you.
For us brewers it's beer that we truly do love,
a gift for all mankind sent from those up above.
Should we find a world lacking, not quite of supply,
must we continue to brew, 'til the day that we die.
Any person can do it, it's easy to start,
though few get so demented and take it to heart.
Fellow brewers I salute, as I raise my mug high,
let us continue to brew 'til we meet in the sky.

but my mug has just emptied; no longer I'll stay!
