Killer Crab Dip
2 packages block style cream cheese
2 cans crab meat, or 1 cup imitation crab meat
(either one works fine)
1/2 cup chopped sweet onion/scallions
1/3 cup shredded cheese, your choice- (I
used Dragone's 4 Italian cheese blend), but you could use Monterey Jack,
cheddar, or your favorite blend of rather mild
cheeses)
1 large spoonful mayonnaise
2 Tsp. regular mustard
Several shakes each: Onion, Garlic, Seasoned
Salt, and Black Pepper
Your favorite crackers for dipping- (Toasteds
brand Wheat work great)
If using imitation crab, chop finely; Dice onion
and add both to cheeses. Add spices, and stir well. Heat on low setting
in pan on stove, until mixture is well blended.
May be served as a hot or cold dip, both
work well.
(These little treats may not sound that special,
but believe me- you'll find yerself making them all the time, they're a
top hit!
2 lb.. Hot Dogs, any mild brand
2 cups ketchup (also known as catsup!)
1/2 cup yellow mustard
1 Tablespoon white vinegar
1 cup brown sugar
Cut dogs into 4 or 5 sections, and brown over
high heat in frying pan; Place in large sauce pot. Mix other ingredients
in a bowl, and pour over hot dogs. Mix well, and let simmer for about
10 minutes over medium heat.
Tortilla Treats
1 pkg. flour tortillas
1/4 tsp. onion powder
1/2 cup chopped black olives
1/4 tsp. garlic powder
1/2 cup chopped green olives
1/4 tsp. chili powder
1/8 tsp. finely chopped cumin
1 pkg. cream cheese
2/3 cup grated jack cheese
Salsa for dipping
In a mixing bowl, combine all spices and cheeses;
mix well. Stir in olives.
Onto each tortilla, spread a thin layer of the
mixture, then roll up tortilla jelly-roll fashion; Chill until cold, then
cut into slices about 1/2' thick; Serve with salsa for dipping.
Hint: After spreading each tortilla with the topping, place it in the microwave for 10 seconds on full power- this makes everything soften just enough to make rolling it up a snap!
Add salsa and POWda to cheese, and melt on high in microwave; Serve with nachos! Simple but addictive!
A variation: leave the salsa out of the microwave, adding it just after you melt the cheese- it tastes fresher that way, but it will cool the cheese a little; Pace brand salsa works best for this, it tastes like fresh-cut tomatoes!
The Ultimate Bruschetta
When fresh-from-the-garden herbs and vegetables
are there for the picking, there's nothing quite like a freshly baked bruschetta
that takes advantage of those seasonal flavors. Slices of authentic
Italian bread layered with these toppings then baked in a hot oven, this
classic treat is quick, fun, and simply delicious!
Best of all, you can custom build the toppings
to your own liking- delete those you don't enjoy, and increase the quantities
of those you do- there are no set rules, other than to make plenty of excess!
1 freshly baked Italian bread, sliced
1/2 cup chopped black olives
1 medium onion, diced
2 ripe tomatos, diced
About 4 oz. Feta cheese with tomato/basil (plain
is ok)
1/4 cup grated Parmesan cheese
1/3 cup freshly chopped basil (loosely
packed)
1/2 cup Light Olive Oil
2 tsp. chopped Parseley
Banana pepper rings, diced
In a large mixing bowl, combine all ingredients
except bread and pepper rings. Mix well, and let sit up to one hour.
On a large cookie tray arrange slices of bread.
Top generously with mixture, and garnish with bits of pepper rings.
Bake in a preheated 375 degree oven until bread is crispy and toppings
begin to brown.
Serve immediately.
Cheese Ball
Easy to make, but you'll be pleasantly surprised at how good this is!
10 oz. cheddar cheese
12 oz. Philidelphia cream cheese
1 tsp sugar
1 tsp Worcestorshire sauce
1/2 tsp garlic powder
1/2 tsp onion powder
1 cup chopped walnuts/pecans
Mix cheeses together, then blend in remaining ingredients except for 1/2 cup of nuts. Refrigerate to harden cheese again. Divide nuts onto two sheets of foil. Place half of cheese onto each, and roll foil into a ball or log, pressing nuts into outer edges of cheese mixture.
Mix all ingredients in a bowl, and pour over wings; Allow to marinate overnight, but may cook in about 4 hours if desired. Heat oven to 350, and bake uncovered for about 1-1/4 to 1-1/2 hours, until sauce becomes rich, thick and candy-like.
